The flavor is bold & authentically chili but in a new, versatile form: I’m planning to add it to burgers, braised beef & ramen—I’ve seen this Cincinnati Chili ramen on TikTok & Instagram that is begging to be recreated.
You can find the recipe below; it yields anywhere from 36-38, 2-ounce meatballs—it was developed to feed a crowd (hint-hint perfect game day recipe) but can be easily adjusted for a smaller serving size.
Anywho, don’t reach for the spices; just grab a packet (or 10), give my meatballs a try & of course, add it to your next pot of chili.

6 ingredient cheddar stuffed chili meatballs
12 servings (appetizer) 8 mins prep 22 mins cook | 30 mins total time
ingredients
3 pounds ground beef
1 ½ cups panko breadcrumbs
3 eggs
1 cup whole milk
2 ½ packets Hormel™ Original Chili Seasoning Packets
36-38 cheese cubes
cilantro for garnish
for the chipotle yogurt sauce
1 cup plain greek yogurt
2 chipotle peppers
1 medium clove garlic
¼ cup lime juice
½ teaspoon fine sea salt
1-1 ½ tablespoons tomato sauce for color
instructions
to prepare meatballs, preheat the oven to 400°F. Prepare a baking sheet lined with parchment paper.
In a large mixing bowl, combine all of the ingredients excluding the cheese cubes. Scoop ~2 ounce meatballs, make an indentation, stuff with cheese & pinch to close. This will make 36-38 meatballs.
Roll into a smooth ball with oiled hands. Place onto the baking sheet. Bake for 22 minutes or until the meatballs are browned & reach an internal temperature of 160°F.
While the meatballs bake, prepare the chipotle sauce. To serve, plate meatballs, top with cilantro leaves & chipotle sauce. Serve immediately.
to prepare chipotle sauce, add all of the ingredients to a blender & pulse until smooth.
