if you love a good martini, you’ll love my extra dirty martini wings
inspired by the timeless cocktail but given a savory backdrop, this recipe is a show-stopper.
It features an ‘extra dirty’ martini sauce made with the olive trio: whole olives, olive oil & olive brine. A splash of botanical gin, sprigs of rosemary & dijon mustard help round out the flavor profile. Enjoy with or without a martini & serve with blue cheese or the extra dirty martini sauce for dipping.

extra dirty martini wings
2-4 servings (main, appetizer) 30 mins marinade + 10 mins prep + 20 mins cook | 60 mins total time
ingredients
2 pounds chicken wings
2 cups olive brine
2 tablespoons avocado oil
1 1/2 tablespoons baking powder
1 tablespoon coriander powder
2 teaspoons cumin powder
1 tablespoon garlic powder
black pepper
salt
for the extra dirty martini sauce
⅔ cup olive brine
4 to 6 olives
2 tablespoons dijon mustard
2 teaspoons botanical gin
½ cup extra virgin olive oil
2 sprigs rosemary, stems removed & roughly chopped
4 garlic cloves, minced
instructions
to prepare the wings, rinse the chicken & pat dry. Add to a zip top bag & cover with olive brine. Shake to coat wings. Refrigerate for 30 minutes up to 6 hours. In a bowl, combine baking powder, coriander powder, cumin powder & garlic powder. Add salt & black pepper to preference. Set aside. Pat wings completely dry. Add to a bowl & drizzle with avocado oil. Toss. Sprinkle with seasoning mix. Toss again. Place wings in air fryer, at 375°F for 20-25 minutes OR 28-30 minutes (for extra crispy wings), flipping halfway through. While chicken is frying, prepare dirty martini sauce.
Pour 1/2 to 3/4th of prepared sauce over fried wings. Toss to coat. Serve immediately alongside blue cheese dip or the reserved extra dirty martini sauce.
to prepare extra dirty martini sauce, add all ingredients to a food processor. Blend until well combined. Season with salt & pepper to taste.
