just imagine running through a field of lavender on a mild spring day with cute (stinger-less) honey bees flying overhead—wrap that into a perfectly toasted cube of bread & voila—that’s my recipe.
whipped honey had a moment on social media this past spring & summer; I always knew I’d put my own spin on it. For dipping, the bites are paired with a whipped salted lavender honey. It’s the perfect pairing to the bites but the recipe yield is enough for you to enjoy on future occcasions.
highly recommend lathering it on toast or drizzled over a stack of fluffy pancakes.

lavender & sweet cream french toast bites with whipped lavender-honey
3-4 servings 10 mins prep + 20 mins cook | 30 mins total time
ingredients
3 eggs
2 cups chobani sweet cream coffee creamer
2-2 1/2 tablespoons lavender extract
pinch of salt
3 tablespoons butter
1-12 count package king’s hawaiian sweet rolls
1/2 cup granulated sugar
1 1/2 teaspoon lemon zest, finely grated
for the whipped lavender salted honey
14 ounces raw honey
2-3 1/2 tablespoons lavender extract
1/2-1 teaspoon salt
instructions
to prepare whipped lavender honey, whip honey on high for 15 minutes until thick & creamy. Add 1 tablespoon of lavender extract & 1/2 teaspoon of salt. Whip again & taste. Add additional lavender in 1/2 tablespoon & additional salt in 1/2 teaspoon increments, based on your preference. Whip for 15 seconds after each addition.
to prepare french toast bites, in a bowl, whisk eggs, coffee creamer, lavender extract & a pinch of salt. Set aside. In a separate bowl, mix lemon zest & granulated sugar. Set aside. Melt 1 tablespoon of butter in a pan over medium-high heat. While butter is melting, add half of the sweet rolls to the creamer-egg mixture; submerge them for 6-8 seconds. Shake off excess mixture or allow to drip off on a wire rack-lined baking sheet. Repeat with remaining rolls. Place rolls in pan ensuring that there is no overcrowding. Brown on all sides. Remove from pan & set aside. Repeat process until all rolls are cooked. Toss rolls in prepared lemon-sugar mixture, if desired. Serve hot with whipped lavender honey for dipping.
