sweet & savory short ribs with coco-turmeric rice

ingredients
for the sweet & savory short ribs
2 pounds beef short ribs
1 1/2 cups beef broth
2 1/2 cups apple juice
1 small knob ginger, chopped
1/2 cup low-sodium soy sauce
3 garlic cloves, finely minced
3/4-1 cup brown sugar
avocado oil
for the coco-turmeric rice
1 1/2 cups long grain, rinsed
1 3/4 cups chicken stock
1/2 cup coconut milk
1/4 teaspoon salt
3/4 teaspoon turmeric powder
1 tablespoon butter
instructions
Liberally season all sides of short ribs with salt & pepper. Turn the Crock-Pot® Multimeal Multi-Cooker on. On one side of Multi-Cooker, select the sear / saute setting; heat 1 tablespoon of avocado oil. Sear short ribs in batches until deeply golden brown on both sides, about 3 to 4 minutes per side. Transfer to a plate.
Add beef broth, apple juice, soy sauce, ginger, garlic & brown sugar. Mix until well combined. Nestle in seared beef & cover. Select the slow-cooker high setting & set for 4 hours.
To the second side of the Multi-Cooker, add rice, chicken stock, coconut milk, turmeric, butter & salt. Stir & cover. Select the rice setting & set for 40 minutes. Press the Sync Finish Button before pressing start.
After 4 hours, remove the beef from the Multi-Cooker. Discard about half of the remaining liquid then select the sear / saute setting to reduce the sauce. Serve beef atop rice ladled with reduced sauce alongside fresh herbs.
