This is the official, unofficial drink of summer: my tropical lassi colada—equal parts mango lassi & piña colada. It’s smooth & creamy with a bit of tang. I’ve developed this as a light, refreshing sipper but if you want a real ‘drank,’ feel free to add additional rum.

tropical lassi colada
5 servings (cocktail) 10 mins prep | 10 mins total time
ingredients
2 ripe mangos (peeled, pitted, chopped)
1 cup coconut milk (full-fat for richness, light for a more refreshing version)
3/4 cup plain Greek yogurt
1 cup pineapple juice
2 1/2 tablespoons agave (adjust to taste depending on mango ripeness)
1/2 teaspoon ground cardamom
juice of 1 1/2 limes
4 oz white rum (optional, or skip for a mocktail)
A pinch of salt
2 cups ice cubes
for the cardamom sugar rim
1 1/2 tablespoons sugar
1/2 tablespoon cardamom
instructions
In a blender, combine mangos, coconut milk, yogurt, pineapple juice, lime juice, honey/agave, cardamom, salt & rum (if using). Add ice & blend until smooth & creamy but pourable. Taste & adjust sweetness or acidity if needed. Combine sugar & cardamom in a small bowl or rimless plate. Rub lime around the rim of your glass & dip in cardamom sugar. Pour into chilled glasses & garnish with pineapple, fronds & a skewer of mango.
