ya breath will be unforgivably stanky but this dip is 100% worth it
this decadent, ooey-gooey dip will put all others to shame
It is a literal party featuring not one but four types of cheese: mozzarella, gouda, feta & cream cheese. Alongside all of that dairy, you can find fresh herbs, slow-roasted shallots & ranch seasoning mix. It brings a nice tang to the dip & adds more herbaceous flavor.
Excluding the slow roast of shallots (and potential frying for a crispy topping), the prep for this recipe is an absolute breeze.
All of the ingredients are mixed'n'mashed in a bowl, plopped into your baking vessel of choice & cooked until bubbling. To add a bit of crunch, the dip is topped with crispy fried shallots before digging in.
This recipe does not include instructions for frying shallots but you can find that by clicking the linked recipe, massaman curry & coconut meatballs, below. I use them as a topping for my massaman curry & coconut meatballs. Don’t feel like frying shallots? Store-bought crispy garlic would be just as tasty & save you a bit of time on prep.
The cheesy, roasted shallot & ranch dip is a great option to whip up for game day or a simple appetizer to ease into a holiday spread. Be warned – after a few bites, your breath will be capable of warding off anyone who crosses your path (but again, it is 100% worth it).

cheesy, roasted shallot & party dip
8-10 servings (appetizer) 10 mins prep + 80 mins cook | 90 mins total time
ingredients
4 shallots
8 ounces cream cheese, softened
6 ounces shredded mozzarella, divided
4 ounces shredded gouda
3 ounces feta cheese
3 tablespoons heavy cream
3 tablespoons chives, minced plus more for garnish
2 ½ tablespoons dill, minced
½ - 1 packet of ranch seasoning mix
¼ cup crispy fried shallots
flaky salt, for garnish
avocado oil
pepper
salt
instructions
preheat the oven to 375°F. Cut ¼-inch from the top of the heads of the shallots. Drizzle ½ tablespoon of avocado oil onto the top of each. Season with a bit of salt & pepper. Wrap in foil, place on a baking sheet & roast in the oven for 55 minutes. Once finished baking, allow to cool.
to a bowl, add cream cheese, feta, heavy cream, ranch seasoning mix, chives, dill as well as salt & pepper, to taste. Squeeze in shallots. Add 4 ounces of mozzarella & gouda. Mix & mash until well combined.
pour into a 10 inch cast iron skillet. Top with the remaining mozzarella. Bake for 12-15 minutes or until bubbling. If desired, broil for 45-60 seconds until browned. Garnish with additional chives, flaky salt & crispy shallots. Serve with your favorite sliced bread, crackers or crudités!
